Ingredients
- ½ cup cold butter
- 1 cup granulated sugar
- ¾ cup powdered sugar
- 2 eggs
- 2½ cups flour + 2 tbsp
- ½ tsp baking soda & ½ tsp baking powder
- ½ tsp salt
- 1 tsp almond extract
- 15 oz ricotta cheese
- 2 tbsp lemon juice + zest from 1 lemon
For the glaze: 2 cups powdered sugar, 4 tbsp lemon juice, zest from 1 lemon
Quick Steps
- Cream butter and sugars, add eggs and almond extract.
- Mix in ricotta, lemon juice, and zest.
- Add dry ingredients, chill dough for 4 hours.
- Scoop onto lined sheets, bake 9-11 mins at 375°F.
- Cool, then drizzle with glaze.
Storage: Keep in the fridge (up to a week) or freeze (up to 3 months).
