Harper’s Holiday Lemon Ricotta Cookies

Hi friends! Harper here! I’m ready to help you bake a holiday favorite from our house to yours. These cookies are soft, zesty and perfect for sharing!

Makes 48 cookies

Ingredients

  • ½ cup cold butter
  • 1 cup granulated sugar
  • ¾ cup powdered sugar
  • 2 eggs
  • 2½ cups flour + 2 tbsp
  • ½ tsp baking soda & ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp almond extract
  • 15 oz ricotta cheese
  • 2 tbsp lemon juice + zest from 1 lemon

For the glaze: 2 cups powdered sugar, 4 tbsp lemon juice, zest from 1 lemon

Quick Steps

  1. Cream butter and sugars, add eggs and almond extract.
  2. Mix in ricotta, lemon juice, and zest.
  3. Add dry ingredients, chill dough for 4 hours.
  4. Scoop onto lined sheets, bake 9-11 mins at 375°F.
  5. Cool, then drizzle with glaze.

Storage: Keep in the fridge (up to a week) or freeze (up to 3 months).
